Thomas Friedman Presentation

Plan B 3.0 by Lester R Brown

A friend recently recommended Lester R. Brown's Plan B 3.0: Mobilizing to Save Civilization. Brown is the author of more than 40 books -- including Outgrowing The Earth, Eco-Economy: Building an Economy for the Earth, Beyond Malthus: Nineteen Dimensions of the Population Challenge, and The Earth from the Air -- and is a well known environmentalist thinker. Click here to read his biography.

I haven't read it but my understanding is that this is the third edition of Brown's classic Plan B: Rescuing a Planet under Stress and a Civilization in Trouble. My friend says "the first half tells how we got in this situation and the second half has solutions; It gives you hope and makes you realize it is possible to solve the environmental problems if we realize the need and get busy."

Sounds interesting and since I've cut back on my book budget I'm happy to hear that while it's available for sale in hardcover and paperback it is also available as a free PDF format book on the Earth Policy Institute website here.

Liquid Assets

As I’ve mentioned before, water conservation and water rights have always interested me since it's an important issue when you grow up on an island.

And I've grown more concerned about the world’s water supply since 2003 when I read Blue Gold: The Fight to Stop the Corporate Theft of the World’s Water by Maude Barlow and Tony Clarke.

So it's been interesting to observe the growing public concern about water.

The current online debate on The Economist's website focuses on water; Proposition: "Water, as a scarce resource, should be priced according to its market value."

The October 23, 2008 MIT Enterprise Forum Global Broadcast is titled "From Soft Drinks to Real Estate: How a Looming Water Crisis Affects Our World and How to Optimize the Business Opportunity" and will discuss:
  • How is the Water Crisis impacting businesses broadly?
  • What is the impact on key industries such as real-estate development and agri-business?
  • How does the cost of water impact us as residents and fellow members in a business community?
  • How does the cost of water impact the cost of goods from hamburgers to t-shirts?
  • How are new technologies being used to mitigate the crisis?
  • Where do business opportunities lie to optimize a looming crisis as profitable prevention practices?

And on Sunday, I watched a ninety-minute documentary on my local PBS station, Liquid Assets: The Story of Our Water Infrastructure.

Liquid Assets is a public media and outreach initiative produced by Penn State Public Broadcasting to inform the nation about the critical role our water infrastructure plays in protecting health and promoting economic prosperity and explores the history, engineering, political, and economic challenges of our water infrastructure, and engages communities in local discussions about public water and wastewater issues.

I highly recommend watching this documentary, whether you are a water expert or just an everyday person whose only recently been interested in water conservation and water rights.

Here are some discussion questions suggested by the producers:

Local Issues
  • What issues in the documentary are similar to the issues in your community?
  • What are the public health or safety issues that can affect your community as a result of problems with the water infrastructure?
  • Has your local economy been affected by shortfalls in your water infrastructure?
  • How will increases in the rate structure be received by consumers?

Infrastructure Maintenance and Repair
  • Who is responsible for sustaining your community’s water resources? What questions would you like to ask them?
  • What is your local watershed?
  • What steps are being taken to protect it?
  • What other communities share this watershed?
  • Have the local water systems been inspected?
  • When will the water systems in your community need to be replaced?
  • Does your community have a plan to rehabilitate and repair its water infrastructure?
  • How will your community pay for infrastructure improvements?
  • How will your community pay for infrastructure improvements? Federal, state, local governments?
  • Private water companies? Increases in rates? Local tax allocations? Other options?

Community Problem Solving
  • What do you believe is the most pressing water issue in your community?
  • What can be done on the local level to solve the community challenges?
  • What individuals and groups need to come together to achieve results?
  • What is the first step in bringing these groups together?
  • How can communities in the same watershed share their ideas?

October 6 Lectures

Janine Benyus gives a talk on Monday October 6, 2008 at 7PM titled "What Life Knows: New ideas from biology that could change the world" at Great Sage in Clarksville.

Biomimicry seeks to emulate the time-tested adaptive strategies of many species of plants, animals and microorganisms to transform how we live on this planet. Thomas Friedman's Hot, Flat, and Crowded

The free audio excerpt that I received last month of Hot, Flat, and Crowded: Why We Need a Green Revolution–and How It Can Renew America by Thomas Friedman has piqued my interest -- you can get your audio excerpt here.

And reading David Victor's New York Times book review titled "Call to Arms for an American-Led Green Revolution" really makes me want to get my hands on a copy.

I like Friedman's blunt no-nonsense, authoritative style and find his work always educational.

Since I'd like to suggest that my book club read this book as it's next non-fiction selection, I looked up some discussion questions:
  1. Discuss chapter one’s title, “Where Birds Don’t Fly,” and the story behind it. How has this bunker mentality affected America’s role as an agent for positive change in the global arena?
  2. In what ways did Hot, Flat, and Crowded help you understand the history of the energy crisis and high fuel prices, from Carter-era progressivism through the Reagan era and beyond? What aspects of this history surprised you the most?
  3. Friedman begins by outlining three trends that capture diverse American attitudes toward energy consumption, climate change, and biodiversity: the “dumb as we wanna be” approach, found even among the political elite; the “subprime nation” mentality of borrowing our way to prosperity; and the optimism of innovators who want to do what’s right. Which attitude prevails in your community?
  4. Discuss the factors that have shaped the Energy-Climate Era: overcrowding due to population growth and longevity, the flattening of the world due to the rise of personal computers and the Internet, the fall of the Soviet Union, and other developments. How have these factors affected America economically, politically, and otherwise?
  5. Chapter two makes the distinction between “fuels from hell” and “fuels from heaven.” How is your life fueled by both categories? What would it take to transition completely to “fuels from heaven”?
  6. In your community, who has the most obvious case of affluenza? How would these groups fare under Chinese capitalism? Do you agree with Friedman’s prediction that Chinese capitalism will signal the death of the European welfare state? What other repercussions will rising affluence within the Chinese middle class be likely to have?
  7. Friedman describes his visit to an ultra-green Wal-Mart in McKinney, Texas, and the highly unecological urban sprawl he had to ride through to get there (chapter three). In what way is this a microcosm of America’s current approach to Code Green?
  8. Friedman’s first law of petropolitics states that as the price of oil goes up, the pace of freedom goes down. Why is this so often true? Did this principle apply to prosperity for American oil companies in the early twentieth century? What are the ramifications of Friedman’s second law of petropolitics, “You cannot be either an effective foreign policy realist or an effective democracy-promoting idealist without also being an effective energy-saving environmentalist”?
  9. In chapter five, Friedman describes the controversy that ensued when meteorologist Heidi Cullen tried to educate her audience about global warming. What is the best way to inform those who tune out such messages, which they believe are tantamount to “politicizing the weather”?
  10. What did you discover about the importance of biodiversity by reading Hot, Flat, and Crowded? Why do the efforts of groups such as Conservation International receive less attention than climate-change studies, though Friedman asserts that they are equally crucial?
  11. Discuss the proposal in chapter seven that ending “energy poverty” is a key to healing third-world populations, particularly in Africa. What is the best way to balance the need for energy in these regions with the destructive effects of power supply emissions? What is the best way to overcome the political instability that has stymied the growth of power grids in these locales?
  12. At the heart of Friedman’s argument is the notion that market demands drive innovation. What would it take to transform America’s perception so that the Code Green message is seen as a key to prosperity? How has the image of environmentalism changed during your lifetime?
  13. Friedman decries halfhearted attempts at environmental change, comparing them to a party rather than a revolution. At your workplace, in your neighborhood, and within your circle of friends, is it fashionable to go green? Is it taken seriously enough to become a bona fide movement, and then a revolution, where you live?
  14. Chapter nine probes the political hurdles that have to be surmounted in order to effect meaningful ecological change. In the book’s concluding passages, Friedman
    even admits to admiring the efficiency with which Chinese autocrats can enact immediate change. What should the role of government be in the face of a looming ecological crisis? How much government control is too much? Could a politician get elected in America by proposing higher fuel taxes and other disincentives for energy consumption?
  15. Discuss chapter ten’s economic principle that REEFIGDCPEERPC is less than TTCOBCOG (Renewable Energy Ecosystem for Innovating, Generating, and Deploying Clean Power, Energy Efficiency, Resource Productivity, and Conservation is less than the True Cost of Burning Coal, Oil, and Gas). How does this apply to your world? Why has America been slow to believe that REEFIGDCPEERPC is affordable?
  16. Are any of the ideas described in Friedman’s “futuristic” scenario (such as the Smart Black Box, smart grids, RESUs instead of cars, and energy costs that vary 3 according to time of day) already in the works in your state?
  17. Chapter eleven includes a proposal that the alternative-energy movement needs an economic bubble, similar to the one that poured staggering amounts of venture capital into the dot-com industry. In your opinion, why hasn’t this happened yet?
  18. Friedman describes a number of innovators and persuaders who have made significant inroads in improving conservation efforts, including an Indonesian imam who was persuaded to acknowledge river pollution, New York taxi drivers who now praise hybrid vehicles, and the U.S. military’s determination to “outgreen” the enemy. What do these agents of change have in common? What should green revolutionaries learn from these experiences?
  19. One of Friedman’s conclusions is that “it is much more important to change your leaders than your lightbulbs.” How will this play out in upcoming elections at all levels, local, state, and federal? What will the legacy of those elected officials be? How can you help to lead the Code Green revolution?
  20. How has the world changed since the publication of Friedman’s earlier books? How is the world now experiencing the effects of situations he covered throughout the 1990s? What human impulses (for example, materialism, benevolence) almost form a theme throughout all his books?

David Orr Lecture

David Orr, professor of environmental science and politics at Oberlin College and one of the leading proponents of environmental literacy in higher education speaks at Roland Park Country School at 7:30 p.m. on Wednesday October 1, 2008 in a talk titled "Some like it Hot, But Lots Don't: The Changing Climate of U.S. Politics."

In Defense of Food by Michael Pollan

As promised, here's a bit more on Michael Pollan's In Defense of Food: an Eater's Manifesto (click here to view all my posts about this book).

Most of the contents of this book can be found from other sources by Michael Pollan -- his articles in the New York Times, The Omnivore’s Dilemma, Pollan on C-SPAN, and Pollan on NPR several times.

What's new is mostly his lists to help us decide what to eat (and even this can be learned from Pollan's talk on C-SPAN):

Eat Food
  • Don't eat anything your great grand-mother wouldn't recognize as food: Don't eat anything incapable of rotting.
  • Avoid food products containing ingredients that are a) unfamiliar, b) unpronounceable, c) more than five in number, or that include d) high-fructose corn syrup.
  • Avoid food products that make health claims.
  • Shop the peripheries of the supermarket and stay out of the middle.
  • Get out of the supermarket whenever possible: Shake the hand that feeds you.

Mostly Plants
  • Eat mostly plants, especially leaves: did you know that the average American eats 200 pound of meat per year?
  • You are what what you eat eats too.
  • If you have the space, buy a freezer.
  • Eat like an omnivore.
  • Eat well-grown food from healthy soils: "it stands to reason that a chemically simplified soil would produce chemically simplified plants."
  • Eat wild foods when you can: lamb's quarters and purslane, wild game meat, salmon, mackerel, sardines, and anchovies are good bets.
  • Be the kind of person who takes supplements.
  • Eat more like the French, or the Italians, or the Japanese, or the Indians, or the Greeks.
  • Regard non-traditional foods with skepticism.
  • Don't look for the magic bullet int he traditional diet.
  • Have a glass of wine with dinner.

Not Too Much

  • Pay more, eat less: Okinawan's say hara hachi bu, eat until you are eighty percent full.
  • Eat meals: didn't there used to be at least a mild social taboo against the between meal snack?
  • Do all your eating at a table: your desk is not a table.
  • Don't get your fuel from the same place your car does.
  • Try not to eat alone.
  • Consult your gut.
  • Eat slowly.
  • Cook and, if you can, plant a garden.

Well, that's it. Pretty simple huh? We should all be slimmer and healthier in no time.

There are a couple of other things I found interesting from this book.



First, since Pollan makes several references to Upton Sinclair’s The Jungle, I'm glad that I finally read it. And like Devra Davis in The Secret History of the War on Cancer, Pollan also posits that the health industry (as a business) has had much to gain from the unhealthiness of Americans -- Pollan mentions fast food companies while Davis mentions large industrial companies. It's always interesting to see how books by different authors seem to converge.

And did you know that the average American today spends less than 10% of their income on food and less than thirty minutes each day preparing meals, and about an hour each day enjoying them; in 1965 the average American spent 44 minutes prepping meals and 21 minutes cleaning up. This lack of cooking, Pollan postulates, has something to do with our unhealthiness.

And check out these calories per day contributions to America's per capita food supply:
  • Corn: 554
  • Soy 257
  • Wheat 768
  • Rice 91

That totals 1,670 and these four crops acccount for two thirds of the calories we eat. It makes me sick just thinking about it. According to Pollan, "humankind has historically consumed some 80,000 edible species, and three thousand of those have been in widespread use." And now we eat mostly just four species, just because they are among the most efficient transformers of sunlight and chemical energy into carbohydrate energy??!

And if that wasn't enough:
  • Half of all broccoli grown commercially in the US is the Marathon variety, known for its high yield.
  • Most of the chickens raised for meat in America are Cornish cross hybrid.
  • More than 99% of the turkeys raised for meat in Americaare Broad-Breasted Whites.

A typical Iowa farm in the early 1900s would have "raised more than a dozen different plant and animal species: cattle, chicken, corn, hogs, apples, hay, oats, potatoes, cherries, wheat, plums, grapes, and pears" and now that same farm would produce just corn and soybeans.

All of this lack of complexity has resulted in a substantial decline in the nutritional quality of produce in this country -- and that's as determined by the USDA.

And here's an interesting quote for you:
The increases in world [omega-6] consumption over the past century may be considered a very large uncontrolled experiment that may have contributed to increased societal burdens of aggression, depression, and cardiovascular mortality.

Hmm, maybe Baltimore would be less violent if it's drug-dealing residents ate a lot more omega-3 fatty acids?!

Economist - Running dry

I'm a little behind on my subscription to the Economist.

Okay, I'm a lot behind.

Months behind.

But I'm going to catch up, starting with the August 23, 2008 issue. From this issue, I just finished the Business section including "Running dry."

As I've mentioned before, I've been seriously concerned about the world's water supply since 2003 when I read Blue Gold: The Fight to Stop the Corporate Theft of the World’s Water by Maude Barlow and Tony Clarke. And having grown up on an island, water conservation and water rights have always been important to me.

My interest has been slowly increasing over the years and it seems like the issue of water is becoming a hotter and hotter subject with each month.

This article just reminded me that I've got to make it a priority to read Marc Reisner’s Cadillac Desert: The American West and Its Disappearing Water (click here to read my posts related to this book) and Ken Midkiff's Not a Drop to Drink: America’s Water Crisis (and What You Can Do).

I hope the situation does not get as desperate as some experts foresee.

An Ocean of Air: Why the Wind Blows and Other Mysteries of the Atmosphere by Gabrielle Walker

In March, I read Gabrielle Walker's fantastic book about the atmosphere, An Ocean of Air: Why the Wind Blows and Other Mysteries of the Atmosphere, which I'd heard about in William Grimes's review published in the New York Times in August 2007.

Since there have been many tornadoes in the news lately, I have frequently found myself thinking about this fascinating and informative book.

Walker -- author of Snowball Earth: The Story of a Maverick Scientist and His Theory of the Global Catastrophe That Spawned Life As We Know It (2004) and co-author of The Hot Topic: What We Can Do About Global Warming (2008) -- earned a Ph.D. in chemistry from Cambridge and it shows in the scientific knowledge she conveys to readers through her lyrical, witty, and easy-going prose.

Written for the average reader without much science knowledge, Walker captivates readers with surprising facts -- did you know that the air filling Carnegie Hall weighs seventy thousand pounds -- and easy to understand details of scientific theories (and the people who discovered them) with cheerful storytelling.

The reviews quotes printed on the back cover say it all:

An Ocean of Air starts with the nail biting story of "the man who fell to Earth and lived": Captain Joseph W. Kittinger, a test pilot for the U.S. Air Force, who in 1960 rode a helium balloon into space and jumped 103,000 feet (almost 20 miles in four and half minutes) to earth wearing an early version of a spacesuit and a parachute.

I particularly enjoyed learning about William Ferrel -- a largely self-taught West Virginia farm boy, who helped explain the movement and direction of air -- and Charles Kettering -- the DuPont scientist whose well-intentioned creation of freon and chlorofluorocarbons were later found to be creating holes in the ozone layer -- and Oliver Heaviside -- the eccentric, self-taught scientist who discovered that an electrical layer in the sky (now called the Heaviside Layer) is responsible for transmitting radio signals across Earth.

The Road by Cormac McCarthy

I had heard rumors that The Road by Cormac McCarthy, one of three books I recommend for Earth Day 2008, was going to be made into a movie so I was thrilled to read Charles McGrath's "At World’s End, Honing a Father-Son Dynamic" (published May 27, 2008 in the New York Times) about filming the movie version!

Filming started in late February mostly in and around Pittsburgh with its "deserted coalfields, run-down parts of Pittsburgh, windswept dunes."

I'm glad to hear that the script is faithful to the book and I hope that Viggo Mortensen portrays the father well (Charlize Theron is set to play the wife and Robert Duvall and Guy Pierce also have minor roles).

The son will be played by Kodi Smit-McPhee, an 11 year of Australian who is known for his masterful American accent!

The Road has great cinematography potential and I will definitely see it when it comes out in theaters!

Cadillac Desert: The American West and Its Disappearing Water by Marc Reisner

A friend just recommended that I read Marc Reisner's Cadillac Desert: The American West and Its Disappearing Water (click here to read the author's obituary as printed in the New York Times).

I'm not a water-rights activist or anything like that but I did enjoy Blue Gold: The Fight to Stop the Corporate Theft of the World’s Water by Maude Barlow and Tony Clarke and am concerned about the future of our water supply.

First published in 1986, Cadillac Desert was a National Book Critics Circle Award finalist and in 1999 it was placed sixty-first on the Modern Library list of the most notable nonfiction English books of the twentieth century.

Mark Reisner is also a co-author of Overtapped Oasis: Reform or Revolution for Western Water.

Anyway, I tried to put it on hold at my local library (since I try to borrow books and read them before purchasing) but they don't carry it.

Animal, Vegetable, Miracle: Asparagus and Morel Bread Pudding

I love to eat fruits and vegetables. I love a good steak too but something about how my mother cooked has made me especially enjoy fruits and vegetables.

Mangoes, lychees, guava, persimmon, papaya, pomelo, nectarines, and clementines are among my favorite fruits.

As for vegetables, I love just about any greens sauteed in garlic, onions and oil. I especially love artichokes, Japanese eggplant, taro (kalo), avocado (technically a stone fruit) and Okinawan sweet potato. And I love asparagus and have been known to eat an entire platter at a time.

And mushrooms are probably my favorite food full-stop (click here to read my entry on Part III of The Omnivore’s Dilemma by Michael Pollan to find out more about my mushroom obsession).

So when I read this recipe for Asparagus and Morel Bread Pudding on page 84-85 of Animal, Vegetable, Miracle: A Year of Food Life by Barbara Kingsolver with Steven L. Hopp and Camille Kingsolver, I was dying to try it! (By the way, click here to read all of my posts related to this book.)

I substituted a variety of reconstituted dried mushrooms for the morels and increased the amount of mushrooms and let me tell you it is every bit as good as it sounds. :)

I haven't tried any of the other recipes yet but I want to make the Pumpkin Soup in its Own Shell, Holiday Corn Pudding a Nine-Year Old Can Make, Chicken Recuerdos de Tuscon, and Cherry Sorbet.

Deep Economy: The Wealth of Communities and the Durable Future by Bill McKibben

Today I'd finally like to share with you what I've learned from McKibben's Deep Economy.

Overall, this book makes me think of Small Giants: Companies that Choose to be Great Instead of Big by Bo Burlingham, which also preaches the idea that growth for the sake of growth does not work for everyone. Deep Economy takes it a step further and states that growth for the sake of growth is unsustainable, that it does not make us happy, and that it is and will continue to lead to growing instability and insecurity.

Chapter Two (The Year of Eating Locally) is a lot like Omnivore’s Dilemma and Animal, Vegetable, Miracle. McKibben discusses CSAs (community supported agriculture) and after reading these three books I'm fairly certain that I will finally join a local CSA in Maryland.

I was surprised at how much Deep Economy related not just to Animal, Vegetable, Miracle and Omnivore’s Dilemma (they share many common examples -- Farmer's Diner - and sources) but also to all the books I've been reading about Positive Psychology. In fact, McKibben quotes Martin Seligman (author of Authentic Happiness) several times and quotes Happiness: Lessons from a New Science by Richard Layard with even greater frequency! It's even related to Renewing America’s Food Traditions: Saving and Savoring the Continent’s Most Endangered Foods (Salmon Nation was mentioned a few times).

Interestingly, McKibben (like Seligman) bashes on the rational economics theory, which was the focus of The Logic of Life: The Rational Economics of an Irrational World by Tim Harford and which I really enjoyed reading!

Still, I really liked how Deep Economy contains so many facts. McKibben just packs them in, sometimes up to 10 per page and for a scientist like me, I find that very convincing.

Totally shocking to me (but really should have been so obvious) is that food produced in Cuba is organic by default due to the embargoes placed on the country. Also surprising was the fact that countries with Wal-marts are poorer than those without Wal-marts and the calculation of the economic value of ecosystem services (pollination, decomposition, etc.) at $33 trillion!

I found this paragraph from the last chapter (The Durable Future), which illustrates that "growth" cannot always be measured in pure economic terms, particularly interesting:
. . . a few people tried cleverness instead of force. Dried water hyacinth makes a superb bed for growing mushrooms. The mushrooms, sold across the region, "are particularly rich in potassium, magnesium, iodine, and calcium," and the system is small and cheap, perfect for microfinance schemes that give peasants small loans. Meanwhile, the cultivation of mushrooms breaks up the cellulose in the water hyacinth, leaving a medium perfect for raising earthworms, who in turn, produce a high-quality humus that can be used instead of synthetic fertilizer. Chickens feed on the worms, providing eggs, and chicken droppings supply the biogas digester, which in turn reduces the need to cut trees for firewood. Any hyacinth left over can be fed to cattle, whose manure goes right back on the fields.

McKibben mentions that a group of farmers in Detroit are now farming over 10 acres and producing crops such as alfalfa, hay, honey, eggs, milk, goat, and beef cattle. In't that just wild??! found this Kate Stohr New York Times article titled "In the Capital of the Car, Nature Stakes a Claim" and published December 3, 2003 which gives more information that McKibben provides in Deep Economy. The idea of locally owned food is really growing on me, not just as being more tasty but also as a viable business.

I also learned about cohousing and Ithaca's Ecovillage from Deep Economy. Cohousing, as described on the official Cohousing website, is:
Cohousing is a type of collaborative housing in which residents actively participate in the design and operation of their own neighborhoods.

Cohousing residents are consciously committed to living as a community. The physical design encourages both social contact and individual space. Private homes contain all the features of conventional homes, but residents also have access to extensive common facilities such as open space, courtyards, a playground and a common house.

It makes sense that such communities would be more sustainable in terms of energy use, though I'm not sure if I'd really want to live in such a community.

And of course, reading Deep Economy has given me a list of several books that I would like to read:

Animal, Vegetable, Miracle: A Year of Food Life by Barbara Kingsolver

Today I'm in the mood to write about Animal, Vegetable, Miracle.

This book came very highly recommended and while I first heard about this book from reading a New York Times article published in May 2007 "My Year of Vegetables" by Corby Kummer (who by the way is a fantastic writer and frequent contributor in The Atlantic -- one of my favorite magazines), it was given to me as a Christmas present. Strangely, Christmas 2007 feels like it just happened and I find it hard to believe that it is now May 2008.

Chapter 1 and most of Hopp's sidebar essays read much like The Omnivore’s Dilemma, listed as a source in Kingsolver's bibliography, with facts of the amount of high fructose corn syrup we literally consume and petroleum we figuratively consume (through fertilizers, herbicides and pesticides and through the gas used to transport our food). Also listed as a source is Gary Paul Nabhan's Coming Home to Eat: The Pleasures and Politics of Local Foods; Nabhan (also the author of Renewing America’s Food Traditions: Saving and Savoring the Continent’s Most Endangered Foods) is a friend of the Kingsolvers!

Kingsolver and her family moved from Tuscon, Arizona to the Webb family farm -- full of charm and history and curious place names like the Milk Gap, Old Charley's Lot, Dewberry Hill and the Paw-Paw Cemetery -- in southwestern Virginia in the Appalachias and vowed to eat only food whose "provenance" they knew for their second year in their new home. Her philosophy is essentially “labors like this help a person appreciate why good food costs what it does. It ought to cost more.”

The Kingsolvers do allow themselves a few non-local food indulgences provided that they'd learn to purchase them "through a channel most beneficial to the grower and the land where it grows." Steven chooses coffee; Camille picks dried fruit; Lily wants hot chocolate; and Kingsolver indulges in spices from far off places. And as the year goes on they allow themselves more and more non-local items but they still grow astonishingly large quantities of their own food.


Kingsolver is an award-winning novelist (and 1972 Betty Crocker Homemaker of Tomorrow Award winner) and it comes through in Animal, Vegetable, Miracle. Her writing is delightful, filled with humor and facts both! Here's an example for you:
"Oh Mama," Lily cried, "Look what's about to bloom -- the tranquils."

There went the last of the needles of ice around my heart, and I understood I'd be doomed to calling the jonquils tranquils for the rest of my days. Lily is my youngest. Maybe you know how these thing go. In our family, those pink birds with the long necks are called flingmos because of how their real name was cutely jumbled by my brother's youngest child--and that was, yikes, twenty years ago.

That's how springtime found us: grinning from ear to ear, hauling out our seedlings, just as the rest of our neighborhood began to haul out the plastic lawn flingmos and little Dutch children kissing and those spooky plywood silhouettes of cowboys leaning against trees.

She just makes you laugh out loud, over and over again. (And in case you didn't know, Lily is Kingsolver's youngest child, who was six years old and starting an egg and chicken business at the time.)

As for facts, did you know that Monsanto, Syngenta, DuPont, Mitsui, Aventis and Dow (6 companies in total) control 98% of the world's seed sales? (I'm guessing that Seeds of Change, Heirloom Seeds and Park Seed Co. are among the 2% not controlled by those giants.) Or that 80% of the beef-packing industry is controlled by four companies -- Tyson (IBP), Cargill (Excell), Swift & Co. (ConAgra) and Farmland National Beef -- and that 80% of the soy-bean processing industry is controlled by three companies -- ADM, Cargill, Bunge and Ag Processing Inc. (AGP)? Or that transporting one calorie of a perishable fresh fruit from California to New York takes about 87 calories worth of petroleum? As Kingsolver puts it, "That's as efficient as driving from Philadelphia to Annapolis, and back, in order to walk three miles on a treadmill in a Maryland gym."

I loved reading the names of various heirloom fruits and vegetables and heritage livestock. Tennessee Fainting goats I'd heard of but, Florida Cracker cattle? Jersey Giant chickens? Gloucester Old Spots hogs? American Mammoth Jack Ass? Midget White, Black Spanish, Beltsville Small White, and Bourbon Red turkeys? Five-color silverbeet? Long Keeper tomatoes? Gold of Bacau pole bean? Russian Banana fingerlings? Suyo Long cucumbers? Inchelium Red, Red Toch, Chesnok Red, Persian Star, and Brown Tempest garlic? Collective Farm Woman melon? Cajun Jewel Okra? Costata Romanesca sqaush? Zucche de Chioggia? Georgian Crystal garlic? La Ratte? Aristocrat pear? Principle Borghese tomatoes (perfect for sun-drying)? Chioggia beets?

I think the most surprising fact from Hopp's sidebars essays are that in 1948 (when pesticides were first introduced), farmers used about 50 million pounds of them and suffered about a 7% loss of all their field crops; whereas in 2000 they used nearly a billion pounds of pesticides and still lose 13% of their field crops. Clearly, pesticides are not helping!

Even Camille Kingsolver's essays, recipes, and food plans are fun to read. Most interesting to me was this section of "Eating my Sister's Chickens:"
Even the ancient Hindu populations of India were not complete vegetarians -- though they did not know this. Traditional harvesting techniques always left a substantial amount of insect parts, mostly termite larvae and eggs, in their grain supply. When vegan Hindu populations began moving to England, where food sanitation regulations are stricter, they began to suffer from a high incidence of anemia. Just a tiny amount of meat (even bug parts!) in the diet makes a big difference.

And the recipes all sound delicious! I am especially looking forward to trying the recipe for Asparagus and Morel Bread Pudding. Mmmm mushrooms . . .

Animal, Vegetable, Miracle did not convince me to become a "local food" fanatic -- there are too many non-local foods that I love, particularly sushi and mangoes -- but it did give me a greater appreciation for farmers and the food they provide.

The Omnivore's Dilemma: Part III (Personal: The Forest)

Today I want to finish writing about The Omnivore’s Dilemma.

I've written about Part I (Industrial Corn) and Part II (Pastoral Grass) and now I will write about Part III (Personal: The Forest).

Pollan makes it abundantly clear that his purpose in investigating the personal (hunted-gathered) food chain is purely philosophical. As Pollan writes, "there are far too many of us and not nearly enough of them" and we simply could not go back to the hunting and gathering lifestyle; it's just impractical.

My favorite quote from the part is from Angelo Garro, a Sicilian and a friend of Pollan's, "You know, food in Sicily doesn't come from the Safeway. It comes from the garden, it comes from nature." And Pollan, speaking of Garro, continues,
So there are eels to catch for the traditional seven-fish dinner on Christmas Eve; chanterelles for hunt in January, wild fennel to gather in April, olives to pick and cure in August, grapes to harvest and crush in September; game to hunt and cure in October; and porcini to hunt after the first rains in November. Each of these rites is performed in the company of friends -- and is accompanied by a good meal, homemade wine, and conversation.

When and how did American lose it's culinary way? As I've mentioned before, my ethnic heritage is Chinese. And for my family, food continues to be central part of our gatherings. We don't hunt, or forage, or even garden. But my mother would always buy fish at the local fish market and greens and other ingredients at the local market. Even today, we always enjoy sitting down for long, leisurely meals (often three hours long, and sometimes up to five or six hours long) filled with joyous (and sometimes intense) conversation and laughter. We eat to savor the flavors and appreciate the effort that has created each ingredient -- as my father used to tell us children, you should think of each grain of rice as equivalent to a bead of sweat from the rice farmer who toiled to grow this. When we travel, we make it a point to eat local foods.

But back to The Omnivore’s Dilemma; I also really enjoyed Chapter 19 Gathering: The Fungi because mushrooms are quite possibly my favorite food! Cream of mushroom soup, polenta with ragout of wild mushrooms, savory mushroom pie, mushroom lasagna, sauteed mushrooms, you name the mushroom dish, I love to eat it.

I didn't know that mushrooms were categorized by the material they grew on. Mycorrhizae (chanterells, morels, boletes, porcinis, etc) grow on live, old trees while saprophytes flourish on dead organic matter (common white button mushroom, shiitakes, cremini/Portobellos, oyster mushrooms, etc.).

This chapter was both interesting and humorous, particularly the mushroom hunting adages:
  • "Seeing is boleting" - you never see any mushrooms until someone else has found one
  • "Mushroom frustration" - when everyone around you is seeing them and you're still blind
  • "Mushroom virginity" - when you haven't yet found a mushroom on a hunt
  • "Cluster fuck" - when you've had luck finding mushrooms and other hunters crowd you hoping your luck will rub off on them
  • "Screen saver" - after a day of mushroom hunting, you'll close your eyes at night and still see mushrooms!

Pollan's final meal, which he called "The Ominvore's Thanksgiving," consisted of:

Mmmmmm.........



Pollan's engaging, lucid, contemplative prose in The Omnivore’s Dilemma is simply astounding. I've read much of his writing since I am a faithful reader of the New York Times, but The Omnivore’s Dilemma did not fail to impress me.

From what I gather, In Defense of Food is an attack on nutritionism and food science: the idea that food is simply the sum of its parts (nutrients and calories), that the effects of individual nutrients can and are scientifically measured, that the primary purpose of eating is to obtain calories and nutrients and thus maintain health, and that eating requires expert advice.

I think In Defense of Food also expands on some of the ideas in Part III of The Omnivore’s Dilemma like the idea that "[C]uisines embody some of a culture's accumulated wisdom about food" and that "when one culture imports another's food species without importing the associated cuisine, and its embodied wisdom, they've made themselves sick."

Also, I came across four books mentioned in The Omnivore’s Dilemma that I want to read:
  1. The Gift of Good Land by Wendell Berry
  2. Meditations on Hunting by Jose Ortega y. Gasset
  3. The Marriage of the Sun and Moon: Dispatches from the Frontiers of Consciousness by Andrew T. Weil
  4. Mushrooms Demystified: A Comprehensive Guide to the Fleshy Fungi by David Arora

And lastly, in case you found this entry because you are reading The Omnivore’s Dilemma for a book club, here are some discussion questions for you to consider (courtesy of Borders Book Stores and the Sierra Club):
  • What is the omnivore's dilemma?
  • How do we currently make food choices? Do we rely on cultural traditions to guide us?
  • Pollan looks at the three food chains that sustain us: industrial food, organic or alternative food, and food we hunt and gather. In industrial food, corn is king. Why is corn so important to the modern food industry? How often does corn show up in our daily diets?
  • How do you as a consumer navigate the marketplace to find the healthiest food? How does this affect your food budget?
  • What values do you want to support with your eating decisions?

  • "Eating's not a bad way to get to know a place," Pollan writes. Describe a meal that deepened your understanding of a location you lived in or visited.
  • "Is an industrial organic food chain finally a contradiction in terms?" Pollan asks, deciding that it is. Do you agree?

The Omnivore's Dilemma: Part II (Pastoral Grass)

As I mentioned on Sunday, last week (April 28 - May 2) was Baltimore Green Week so I've been reading:

Today I want to continue writing about Part II (Pastoral Grass) of The Omnivore’s Dilemma.

Part II talks about two types of food growing chains -- large-scale industrial organic, small-scale pastoral organic -- and culminates with meals at the end of each chain.

At the center of large-scale industrial organic is Whole Foods Market, as well as Gene Kahn of Cascadian Farms (a General Mills subsidiary), Drew & Myra Goodman of Earthbound Farms (producers of those ubiquitous pre-washed baby lettuce mixes), and other smaller industrial scale organic growers (such as Petaluma Poultry and Greenway Organics).

Industrial organic farms tend to grow monoculture (one crop at all times) so while they don't use fertilizers or pesticides, they are still susceptible to the disease and pests that come with monoculture. But because of the massive quantities of compost that industrial organic farms require, they consume huge amounts of petroleum to transport the compost needed!

So are organics good for you? Well yes, science supports the idea that organics do have more nutrients than industrial foods. Organics are full of polyphenols, which may have evolved in plants to defend itself against pests and disease.

And what about "free-range" chickens? "Free-range" hens must stay indoors for the first five to six weeks of their life (to prevent disease) and are permitted to go outside for the final two weeks of their life before slaughter. But most never venture outside and the farmers would prefer that they not go outside as it would make them more susceptible to infection! Nevertheless, the barn doors are open during the final two weeks but the hens never go out because all their food and water are indoors and thus they have no interest in leaving the barn!

On the other hand the focus of small-scale pastoral organic is Joel Salatin's Polyface Farms in Swoope, VA.

Pollan's descriptions of Polyface Farms fill you with wonder. How can 100 acres of pasture patchworked with 450 acres of forest possibly produce tomatoes, sweet corn, berries, chicken, beef, turkey, eggs, rabbits, and pigs? Salatin guesses that in one growing season Polyface Farms produces
30,000 dozen eggs
10,000 broilers [chickens]
800 stewing hens
50 beeves (representing 25,000 pounds of beef)
250 hogs (25,000 pounds of pork)
1,000 turkeys
500 rabbits

By measure of health, Polyface Farms is hugely productive and successful -- it simply has no need for antibiotics and it's animals and plants don't get sick. But even in terms of nutrient produced, one acre of well-managed pasture is more productive than one acre of corn! And a one acre of well-managed pasture can remove 14 billion pounds of carbon from the atmosphere each year, that's the equivalent of removing 40 million cars from the road!

And how does Polyface Farms manage to be more productive in it's "off the grid" farming? By practicing "management-intensive grazing" and following what Pollan calls the "law of the second bite." Simply put, Salatin moves his animals around his pastures in a way that harnesses a great amount of solar energy captured in the form of grasses (such as orchard grass, fescue, red and white clover, millet, bluegrass, and plantain, timothy and sweet grass) and reduces and "recycles" the waste by composting.

In nature, "birds follow and clean up after herbivores" so Salatin puts chickens on pastures three to four days after cattle were on it. The chickens then eat the grubs out of the cowpats (cow manure) and provide fertilizer in the form of its own manure.

In addition, the cows are moved frequently to prevent overgrazing and undergrazing (both of which decrease the ground's fertility) and Salatin has even learned to move his cattle at the end of the day, when sugar, water and minerals have peaked in the grass that his cattle eat. With the proper amount of grazing, the cattle help the grass to become even more vibrant and to convert ever more solar energy into calories!

And I haven't even told you of Pollan's writing of chef's descriptions of the quality of the food at Polyface Farms. People -- chefs, foodies, and locals from Virginia -- all seem to agree that the food from Polyface Farms just tastes better.

And science agrees! Grass-fed meat has more beta-carotene, vitamin E, folic acid, omega-3 fatty acids in the form of ALA (alpha linoleic acid) and CLA (conjugated linoleic acid, a transfat shown to have antioxidant and anti-tumor properties)! Plus it's lower in overall fat and has much lower quantities of bacteria than industrial corn feed-fed meat.

Joel Salatin's Polyface Farms in Swoope, VA sounds truly amazing. Salatin says, "One of the greatest assets of a farm is the sheer ecstacy of life." Wouldn't we all love to experience that?!

Considering Polyface Farms is less than a half-day's drive from where I live in Baltimore, I'll have to make it down there sometime this summer. Maybe in July or August.
